I struggle with eating enough vegetables. This morning, I really wanted a blueberry bagel. However, that is a bad choice for me now. Instead, I had a maple chicken sausage, a fried egg, topped with chopped up and sauteed mushrooms, tomato, purple onion, garlic, fresh spinach, and a sprinkle of parmesan. I added some chopped fresh basil too, and bit of sriracha sauce. I also had a piece of Wasa Crisp Bread.
Goodness, it was delicious. I almost made it again for lunch. It was that good! I plan to have it again tomorrow morning!
I was doing so good with the diet the newest doctor wants me on (not that they ever seem to do anything for my weight or blood tests), but I came off of it for Easter due to visiting company. I have struggled like hell to get back into the swing of it. I hate having to watch what I eat.
